Sloppy Joe’s
Making your own Sloppy Joe's is so easy that there's no reason to use commercial sauce. We've upped the veggie content with this recipe to add more fiber and nutrition, and you can prepare this recipe with ground turkey instead of beef if you prefer.

Sloppy Joe’s
Ingredients
1 Tablespoon olive oil
1/2 cup minced carrots
1/2 cup finely chopped red bell pepper
1 cup finely chopped white or yellow onion
1/2 cup finely chopped celery
2 cloves garlic, minced
1/2 teaspoon salt
1 1/4 lb ground beef
1/2 cup ketchup
2 cups tomato sauce
1 tablespoon Worcestershire sauce
1 tablespoon red wine vinegar
1 1/2 tablespoons brown sugar
Pinch cayenne pepper
1/4 teaspoon black pepper
4 whole-grain buns, split
Directions
Heat olive oil in a large sauté pan on medium high heat. Add the minced carrots and cook for 5 minutes.

Add the chopped onion, bell pepper and celery. Cook, stirring occasionally until onions are translucent, about 5 more minutes. Add the minced garlic and cook for 30 more seconds. Remove from heat. Remove vegetables from the pan to a medium sized bowl and set aside.

Using the same pan, crumble the ground beef into the pan. Sprinkle with salt. Brown the ground beef until cooked through. Drain, if necessary.

Add ketchup, tomato sauce, Worcestershire, vinegar, sugar and spices to the ground beef. Add vegetables back into the same pan and simmer for ten minutes.

Spoon meat filling onto buns and serve immediately.
