Fig, Caramelized Onion and Blue Cheese Flatbreads
Ingredients
2 store-bought naan flatbreads
1 pint fresh figs, rinsed, stems removed and quartered
4 ounces blue or Gorgonzola cheese, crumbled
1 large sweet onion, chopped
2 tablespoons olive oil
Salt and pepper, to taste
Honey, for drizzling
Directions
Make the caramelized onions: Heat oil in a large skillet to medium on the stove-top. Add onions and cook, stirring every few minutes, until the onions turn fragrant and a golden caramel color. Season with salt the last few minutes of cooking. Once onions are caramelized, remove from heat and set aside.

Toast flatbreads lightly in the oven. Once toasted, place flatbreads on a work surface. Spread a spoonful on onions on each flatbread and top with blue cheese and figs. Season with salt and pepper, drizzle with honey, slice and serve.
