6 bone-in, skin-on chicken thighs
1/2 white onion, sliced
3 tablespoons honey
1/2 cup whole-grain mustard
Salt and pepper, to taste
Preheat your oven to 375 F. Place onion slices in a glass baking dish and place chicken thighs, skin side up, on top of the onions. Season chicken with salt and pepper.
Whisk together honey and mustard and drizzle over the chicken thighs. Roast for 55 minutes-1 hour, until the chicken skin is crispy and the juices run clear. Remove from oven, garnish with parsley and serve immediately.
