Ingredients
1/2 cup butter
1 medium yellow or red onion, diced
2 garlic cloves, minced
1/2 teaspoon thyme leaves
1/2 teaspoon ground sage
3 potatoes, peeled and diced (we like Yukon Golds for this recipe)
1 16-ounce bag sauerkraut, from the deli aisle
1 pound beef kielbasa, cut into 1/2 inch pieces
1/2 teaspoon freshly ground black pepper
Directions
Preheat your oven to 225 F.
In a dutch oven, sauté the onions on medium for 8-10 minutes, until the onions are beginning to brown on the edges. Add minced garlic and sauté until fragrant, about another two minutes. Remove from heat. Add sage, thyme and pepper, sauerkraut, kielbasa and potatoes.
Cover and cook in oven for 3 hours. Let cool for a few minutes before serving.
